Baked Artichokes with Anthotyro Cheese

Artichokes get their own filling made from anthotyro - a traditional fresh cretan cheese and become the ideal appetizer.

Ingredients:

12 large whole artichokes, boiled
Salt, freshly ground pepper

For the filling:

1 cup crumbled anthotyro cheese
½ cup grated graviera cheese + a little extra
4 sprigs of dill or fennel, finely chopped
2 fresh onions, finely chopped
4 sprigs of parsley, finely chopped
2 eggs
½ teaspoon sweet paprika
1 small coffee cup of extra virgin olive oil
Some breadcrumbs
Olive oil for the baking dish

Instructions:
Preheat the oven to 200°C. In a bowl, mix all the filling ingredients well.

Place the artichokes in a greased baking dish. Season them lightly with salt and pepper, and fill them with the filling mixture. Sprinkle with breadcrumbs and the extra graviera cheese.

Bake in the oven for 30-35 minutes until the surface is golden brown.
