Ingredients:
4-5 artichokes in oil from a jar, halved. (www.zouridakis.gr)
2 boiled or baked potatoes, peeled and cut into medium-sized cubes
8 pieces of Cretan bulbs (ascordoulaki) (www.zouridakis.gr)
1 bunch of rocket, roughly chopped (optional)
Caper leaves (www.zouridakis.gr)
5 cherry tomatoes, halved
2 tablespoons of dill, finely chopped
A little salt for the lemon-olive oil dressing
8 tablespoons of olive oil (www.zouridakis.gr)
2 tablespoons of lemon juice
Salt and black pepper
Instructions:
Place the potatoes, artichokes, and bulbs in a bowl.
Add the caper leaves, cherry tomatoes, and dill.
In a separate small bowl, whisk together the fresh lemon juice, olive oil, salt, and pepper.
Pour the dressing over the salad and mix well.
